Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon and garlic-sautéed green beans served over a bed of fluffy brown rice with a squeeze of zesty lemon.
INGREDIENTS
7 oz Wild Salmon Fillet
0.5 cup Cooked Brown Rice
1 cup Fresh Green Beans
1 tsp Extra Virgin Olive Oil
2 cloves Garlic
PREPARATION
Cook the brown rice according to package directions until tender.
Pat the salmon dry and season both sides with salt and pepper.
Heat half of the olive oil in a large skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for about 4 minutes until the skin is crispy.
Flip the salmon and cook for another 3 minutes or until cooked to your preference.
Remove salmon from the pan and set aside to rest.
In the same pan, add the remaining oil and the minced garlic, sautéing until fragrant.
Toss in the green beans with a tablespoon of water and cover for 3 minutes to steam until tender-crisp.
Serve the seared salmon over the fluffy brown rice with the garlic green beans on the side.
