In a small bowl, whisk together the whole eggs and egg whites until the mixture is uniform and bubbly.
Push the sautéed vegetables to the side of the pan or remove them, then add the remaining teaspoon of butter to the empty side.
Pour the egg mixture into the pan and reduce the heat to low.
Gently stir the eggs with a silicone spatula, using a folding motion to create soft, creamy curds until they are just set.
Transfer the creamy eggs to a plate and serve alongside the turkey sausage, sautéed vegetables, and fresh sliced avocado.
