Garlic Parmesan Chicken Alfredo Pasta
Pan-seared chicken breast tossed with brown rice penne in a creamy, garlic-infused Greek yogurt sauce that offers a velvety finish.
INGREDIENTS
4.5 oz Chicken breast
2 oz Brown rice penne pasta
2 tbsp Plain Greek yogurt
1.5 tbsp Parmesan cheese
2 cloves Garlic
0.5 tbsp Ghee
1 cup Broccoli florets
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Fresh parsley
PREPARATION
Bring a large pot of salted water to a boil and cook the brown rice penne according to package directions.
During the last 3 minutes of pasta cooking, add the broccoli florets to the pot to lightly steam.
While pasta cooks, season the chicken breast with sea salt and black pepper.
Heat ghee in a large skillet over medium-high heat and sear the chicken until golden and cooked through, about 5-6 minutes per side.
Remove chicken from the pan, let it rest for 2 minutes, then slice into thin strips.
In the same skillet, reduce heat to low and sauté the minced garlic for 1 minute until fragrant.
Whisk in the Greek yogurt and parmesan cheese with 2 tablespoons of reserved pasta water to create a smooth sauce.
Toss the cooked pasta, broccoli, and sliced chicken into the sauce until well coated.
Garnish with fresh parsley before serving.
