PREPARATION
Whisk orange juice, coconut aminos, and arrowroot powder in a small bowl to create the glaze.
Season the cubed chicken breast with sea salt and black pepper.
Heat avocado oil in a large skillet or wok over medium-high heat.
Add chicken to the skillet and sear until golden brown and cooked through, about 5 to 6 minutes.
Remove chicken from the pan and set aside.
Add broccoli, bell peppers, snap peas, ginger, and garlic to the same skillet and stir-fry for 3 to 4 minutes until tender-crisp.
