Seared Salmon Fillet with Steamed Green Beans and Sweet Potato Mash
Pan-seared salmon served over a creamy sweet potato mash with crisp steamed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6 oz Wild Atlantic Salmon Fillet
150g Sweet Potato, peeled and cubed
100g Fresh Green Beans, trimmed
3 tbsp Nonfat Plain Greek Yogurt
1 tsp Avocado Oil
Pinch of Sea Salt and Black Pepper
1 Lemon wedge
PREPARATION
Place the cubed sweet potatoes in a pot of water and bring to a boil, cooking for 10-12 minutes until tender.
While potatoes boil, place a steamer basket over another pot of simmering water and steam the green beans for 5-7 minutes until they are bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the avocado oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for an additional 2-3 minutes until desired doneness.
Drain the sweet potatoes and mash them thoroughly, stirring in the Greek yogurt until the texture is smooth and creamy.
Serve the seared salmon alongside the sweet potato mash and steamed green beans, finishing with a fresh squeeze of lemon juice.
