0.5 cup Cooked Quinoa
100g Asparagus spears
50g Red Bell Pepper, sliced

PREPARATION
Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Trim the woody ends off the asparagus and slice the red bell pepper into thin strips.
Toss the vegetables with half of the olive oil and a pinch of dried oregano and sea salt.
Roast the vegetables for 12 to 15 minutes until they are tender and slightly charred.
Season the salmon fillet with sea salt, cracked black pepper, and a dusting of Mediterranean herbs.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4 minutes until a golden crust forms, then flip and cook for another 3 to 4 minutes.
