5.5 oz Wild Sockeye Salmon
2 cups Cauliflower florets
1 cup Green beans
2 tsp Olive oil
1/4 cup Non-fat Greek yogurt
2 cloves Garlic
PREPARATION
Steam the cauliflower florets until very tender, then drain thoroughly.
Mash the cauliflower with the Greek yogurt and a pinch of salt until it reaches a velvety consistency.
Season the salmon with salt and pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until cooked through.
Remove the salmon and add the remaining teaspoon of oil to the same skillet.
Sauté the green beans and minced garlic for 3-5 minutes until the beans are crisp-tender.
