Seared Salmon with Steamed Asparagus and Garlic Mashed Cauliflower
Pan-seared salmon fillet served over creamy garlic mashed cauliflower with a side of tender steamed asparagus and a squeeze of zesty lemon.
INGREDIENTS
5.5 oz Salmon Fillet
1.5 cups Cauliflower florets
1 cup Asparagus spears
1 tsp Ghee
1 clove Garlic
1 tbsp Lemon Juice
PREPARATION
Place the cauliflower florets and peeled garlic clove in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
While cauliflower steams, trim the woody ends off the asparagus and steam them in a separate basket for 3-5 minutes until tender-crisp and bright green.
Transfer the steamed cauliflower and garlic to a blender or food processor, add the lemon juice and a pinch of sea salt, and blend until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat the ghee in a non-stick skillet over medium-high heat.
Place the salmon skin-side up in the pan and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until the fish is opaque and flakes easily with a fork.
Plate the garlic mashed cauliflower first, top with the seared salmon, and serve the steamed asparagus on the side.
