Cut the ropes into 1-inch bite-sized pieces using a knife or bench scraper.
Bring 4 cups of water and the baking soda to a boil in a large pot, then reduce to a simmer.
Drop the dough bites into the water bath for 30 seconds, then remove with a slotted spoon and place on the prepared baking sheet.
Brush the tops of the bites with the whisked egg white.
In a small bowl, mix the parmesan cheese, garlic powder, dried parsley, and black pepper.
Sprinkle the parmesan mixture generously over the bites and bake for 12-15 minutes until golden brown and firm.
