Slice the chicken breast into bite-sized strips and place them in a bowl.
Toss the chicken with the chipotle powder, cumin, garlic powder, sea salt, and black pepper until evenly coated.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes until browned and cooked through.
Remove the chicken from the skillet and set aside. In the same pan, add the sliced bell peppers and red onions, sautéing for 3-4 minutes until tender-crisp.
In a separate small pan or microwave-safe bowl, steam the cauliflower rice until tender.
Warm the black beans in a small saucepan over low heat.
Assemble the bowl by layering the cauliflower rice at the base, followed by the chipotle chicken, sautéed peppers and onions, and black beans.
Top with sliced avocado, fresh cilantro, and a drizzle of lime juice before serving.
