Sauté for another 3-4 minutes until the courgette is vibrant and slightly softened.
Push the hash to the sides of the pan and crack the eggs into the center.
Cook the eggs for 2-3 minutes until the whites are set but the yolks remain runny.
Plate the hash, top with sliced avocado, and sprinkle with chia seeds before serving.
