Garlic Parmesan Chicken Alfredo with Fettuccine
Sautéed chicken breast and fettuccine tossed in a creamy, garlic-infused Greek yogurt sauce with a velvety Parmesan finish.
INGREDIENTS
4.5 oz Chicken breast
1.5 oz Dry fettuccine
1 tsp Extra virgin olive oil
1 clove Garlic
0.25 cup Non-fat Greek yogurt
1.5 tbsp Grated Parmesan cheese
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Fresh parsley
2 tbsp Water
PREPARATION
Bring a large pot of salted water to a boil and cook the fettuccine until al dente according to package instructions.
Carefully reserve 2 tablespoons of the starchy pasta water before draining the noodles.
Season the chicken breast evenly with sea salt and black pepper.
Heat olive oil in a large skillet over medium heat and cook the chicken until golden brown and cooked through, approximately 6 minutes per side.
Remove the chicken from the skillet, let it rest for 5 minutes, then slice into thin strips.
In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant, being careful not to burn it.
Reduce the heat to low and whisk in the Greek yogurt, Parmesan cheese, and reserved pasta water until the sauce is smooth and creamy.
Add the cooked fettuccine and sliced chicken back into the skillet, tossing gently to coat every strand in the sauce.
Garnish with freshly chopped parsley and serve immediately.
