INGREDIENTS
6.5 oz Wild Atlantic Salmon
2 cups Cauliflower florets
1 cup Asparagus spears
1.5 tsp Ghee
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets until they are very tender, about 10-12 minutes.
While cauliflower steams, trim the woody ends off the asparagus and steam for 4-5 minutes until bright green and crisp-tender.
Drain the cauliflower well and mash or process with minced garlic and half of the ghee until creamy and smooth.
Season the salmon fillet with sea salt and black pepper.
Heat the remaining ghee in a cast-iron skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes per side until the skin is crispy and the fish flakes easily.
Serve the salmon over a bed of garlic cauliflower mash with the steamed asparagus on the side.
