PREPARATION
Slice the chicken breast into thin strips and season with the dried oregano, half of the sea salt, and half of the black pepper.
Heat a non-stick skillet over medium-high heat and sear the chicken strips until golden brown and cooked through, approximately 3-4 minutes per side.
In a food processor, combine the canned chickpeas, tahini, garlic, lemon juice, extra virgin olive oil, and the remaining sea salt and black pepper.
Process the mixture until completely smooth, then add the fresh parsley and pulse a few times until the herbs are finely chopped and incorporated.
