0.5 tbsp Extra virgin olive oil
1 cup Asparagus
1 clove Garlic
0.5 tsp Fresh rosemary
0.5 tsp Fresh thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Pat the steak dry with paper towels and season both sides with the sea salt and black pepper.
In a small bowl, mash the ghee with minced garlic, chopped rosemary, and chopped thyme until well combined.
Heat the olive oil in a cast-iron skillet over medium-high heat until the oil is shimmering.
Place the steak in the hot skillet and sear for 3 to 4 minutes per side for medium-rare, or until it reaches your desired doneness.
During the last minute of cooking, place the garlic-herb ghee on top of the steak and let it melt, basting the meat with the juices.
Remove the steak from the pan and let it rest on a cutting board for at least 5 minutes to lock in the juices.
