1.5 cups Cauliflower florets
1 cup Asparagus spears

PREPARATION
Preheat your oven to 400°F (200°C).
Trim the woody ends off the asparagus and toss with half of the olive oil, minced garlic, salt, and pepper on a baking sheet.
Roast the asparagus for 12-15 minutes until tender and slightly charred.
While the asparagus roasts, steam the cauliflower florets until they are very soft, about 8-10 minutes.
Drain the cauliflower well and process in a blender or mash by hand with a pinch of salt until reaching a smooth, creamy consistency.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
