Baked Salmon Sushi Rice Casserole
Salmon and sushi rice baked until bubbly with a creamy Sriracha-yogurt glaze, served with crisp nori sheets for a savory and satisfying crunch.
INGREDIENTS
5.5 oz Salmon fillet
0.5 cup Cooked sushi rice
0.25 cup Plain Greek yogurt
0.5 tbsp Avocado oil mayonnaise
1 tsp Sriracha
1 tsp Coconut aminos
0.5 tsp Rice vinegar
1 tsp Furikake seasoning
1 sheet Roasted nori
0.25 cup Cucumber
1 tbsp Scallions
0.13 tsp Sea salt
0.13 tsp Black pepper
PREPARATION
Preheat your oven to 400°F and lightly grease a small oven-safe baking dish.
Season the salmon fillet with sea salt and black pepper, then roast for 12-15 minutes until the fish flakes easily with a fork.
In a medium bowl, flake the cooked salmon and mix it with the Greek yogurt, avocado oil mayonnaise, sriracha, and coconut aminos until well combined.
In a separate bowl, toss the cooked sushi rice with rice vinegar, then press it firmly into an even layer at the bottom of your prepared baking dish.
Spread the salmon mixture evenly over the rice layer and sprinkle the top with furikake seasoning.
Bake the casserole for 10 minutes until the top is slightly golden and heated through.
Remove from the oven and garnish with diced cucumber and sliced scallions.
Cut the nori sheet into small rectangles and serve the warm sushi bake by scooping it into the nori pieces.
