Add the sliced red bell peppers and snap peas, sautéing for 3 to 4 minutes until tender-crisp.
Stir in the red curry paste and cook for 1 minute until fragrant.
Add the shrimp, fish sauce, and coconut aminos to the skillet.
Sauté the shrimp for 3 to 5 minutes until they are pink, opaque, and fully cooked.
Remove from heat and stir in the fresh lime juice.
Fluff the coconut rice with a fork and divide into bowls.
Top the rice with the red curry shrimp and vegetables.
Garnish with fresh cilantro and black pepper before serving.
