PREPARATION
Dice the pork tenderloin into 1/2-inch cubes and finely mince the pork belly.
Place the minced pork belly in a cold wok or large skillet over medium-high heat to render the fat until crispy.
Add the pork tenderloin cubes to the skillet, seasoning with sea salt and black pepper, and sear until golden brown and cooked through.
Stir in the minced garlic and grated ginger, cooking for 30 seconds until fragrant.
Add the chopped kimchi and sauté for 2 minutes to caramelize the sugars and intensify the flavor.
