Preheat oven to 400°F and line a baking sheet with parchment paper.
Place the chicken breast between two sheets of plastic wrap and pound to an even half-inch thickness.
In a shallow bowl, whisk the egg white until slightly frothy.
In another bowl, combine panko, parmesan, oregano, garlic powder, salt, and pepper.
Dip the chicken into the egg white, then press firmly into the breadcrumb mixture to coat both sides.
Place chicken on the baking sheet and bake for 15 minutes or until the coating is golden and crispy.
Remove from oven, spoon marinara over the chicken, and top with shredded mozzarella.
Return to the oven for 3-5 minutes until the cheese is bubbly and melted.
While the cheese melts, lightly sauté the zucchini noodles in a pan for 2 minutes until just tender.
Serve the crispy chicken parmesan over the bed of zucchini noodles.
