Seared Salmon with Steamed Asparagus and Cauliflower Mash
Pan-seared wild salmon served over a creamy garlic cauliflower mash with crisp-tender steamed asparagus and a squeeze of fresh lemon.
INGREDIENTS
6.5 oz Wild Salmon Fillet
2.5 cups Cauliflower Florets
1 cup Asparagus spears
2 tbsp Nonfat Plain Greek Yogurt
1 tsp Extra Virgin Olive Oil
Garlic powder, salt, and pepper to taste
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
While cauliflower steams, trim the woody ends off the asparagus and steam them in a separate basket for 3-5 minutes until bright green and crisp-tender.
Transfer the steamed cauliflower to a blender or food processor with the Greek yogurt, garlic powder, and a pinch of salt; blend until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until the internal temperature reaches 145°F.
Spoon the cauliflower mash onto a plate, top with the seared salmon, and serve alongside the steamed asparagus.
