1 cup Asparagus spears
0.5 tbsp Extra virgin olive oil
1 tbsp Almond flour
1 tsp Lemon juice
0.5 tsp Dried parsley
0.5 tsp Dried dill
0.25 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F (204°C) and line a large rimmed baking sheet with parchment paper.
Trim the woody ends off the asparagus spears and arrange them on one side of the prepared baking sheet.
Drizzle the asparagus with half of the olive oil and season with a portion of the sea salt and black pepper.
In a small mixing bowl, whisk together the almond flour, dried parsley, dried dill, garlic powder, and the remaining sea salt and black pepper.
Pat the salmon fillet dry with a paper towel, brush with the remaining olive oil and lemon juice, then firmly press the almond-herb mixture onto the top of the fillet to create a crust.
Place the salmon on the baking sheet next to the asparagus and roast for 12 to 15 minutes, or until the salmon is opaque and flakes easily with a fork and the asparagus is tender-crisp.
