Turmeric-Spiced Salmon with Roasted Vegetables
Pan-seared salmon fillet seasoned with vibrant turmeric and ginger, served alongside a colorful medley of roasted broccoli and bell peppers.
INGREDIENTS
7 oz Salmon fillet
0.5 tbsp Extra virgin olive oil
1 cup Broccoli florets
1 cup Red bell pepper
0.5 tsp Ground turmeric
0.25 tsp Ground ginger
0.25 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 whole Lemon
PREPARATION
Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
Place the broccoli florets and sliced red bell peppers on the baking sheet, then drizzle with half of the olive oil and a pinch of salt and pepper.
Toss the vegetables to coat evenly and roast in the oven for 15 to 18 minutes until tender and slightly charred.
While the vegetables roast, pat the salmon fillet dry with a paper towel and season both sides with turmeric, ginger, garlic powder, and the remaining salt and pepper.
Heat the remaining olive oil in a non-stick or cast-iron skillet over medium-high heat.
Place the salmon in the skillet, skin-side down, and sear for 4 to 5 minutes until the skin is crispy and golden.
Flip the salmon carefully and cook for an additional 3 to 4 minutes until the fish is opaque and flakes easily with a fork.
Remove the vegetables from the oven and plate them alongside the salmon, finishing the dish with a generous squeeze of fresh lemon juice.
