Add the ground turkey to the skillet, breaking it up with a spatula.
Season the turkey with sea salt, black pepper, garlic powder, smoked paprika, and dried oregano.
Cook the turkey until browned and mostly cooked through, about 5-6 minutes.
Stir in the diced red bell pepper and yellow onion, sautéing for 3-4 minutes until the vegetables are tender-crisp.
Add the baby spinach and stir until just wilted.
Use a spoon to create two small wells in the turkey and vegetable mixture.
Crack one egg into each well.
Reduce heat to medium-low, cover the skillet with a lid, and cook for 3-5 minutes until the egg whites are set but the yolks remain runny.
Remove from heat and serve immediately directly from the skillet.
