Garlic Butter Shrimp Scampi with Linguine
Sautéed shrimp tossed with al dente linguine in a silky garlic-butter sauce, finished with a bright squeeze of fresh lemon and aromatic parsley.
INGREDIENTS
7 oz Shrimp
1.5 oz Dry linguine
0.5 tbsp Grass-fed butter
0.5 tbsp Extra virgin olive oil
3 cloves Garlic
0.25 tsp Red pepper flakes
1 tbsp Fresh lemon juice
0.5 tsp Lemon zest
2 tbsp Fresh parsley
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Bring a large pot of salted water to a boil and cook the linguine until al dente, reserving a splash of pasta water before draining.
In a large skillet over medium heat, melt the butter with the olive oil until shimmering.
Add the minced garlic and red pepper flakes to the skillet, sautéing for about 1 minute until the garlic is fragrant.
Increase the heat to medium-high and add the shrimp in a single layer, seasoning with sea salt and black pepper.
Cook the shrimp for 2-3 minutes, flipping once, until they are pink and opaque throughout.
Stir in the lemon juice, lemon zest, and the reserved pasta water to create a light sauce.
Add the cooked linguine to the skillet and toss thoroughly to coat the pasta in the garlic-butter sauce.
Garnish with fresh chopped parsley and serve immediately while hot.
