Buttery Garlic Mashed Potatoes with Seared Chicken
Pan-seared chicken breast served with creamy, buttery garlic mashed potatoes and topped with fresh, aromatic chives for a comforting and savory finish.
INGREDIENTS
5 oz Chicken breast
1 medium Russet potato
2 tbsp Plain Greek yogurt
0.5 tbsp Ghee
1 clove Garlic
1 tbsp Fresh chives
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Olive oil
PREPARATION
Peel and cube the russet potato, then place in a pot of water and boil until fork-tender, about 15 minutes.
While the potato boils, season the chicken breast on both sides with sea salt and black pepper.
Heat the olive oil in a skillet over medium-high heat and sear the chicken for 6 to 7 minutes per side until the internal temperature reaches 165 degrees.
Drain the cooked potatoes and return them to the warm pot.
Add the minced garlic clove, ghee, and Greek yogurt to the potatoes and mash until smooth and creamy.
Finely chop the fresh chives and fold them into the mashed potatoes.
Plate the seared chicken breast alongside the garlic mashed potatoes and serve immediately.
