Pour in the chicken broth, bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
Once the rice has absorbed the liquid, remove from heat, fluff it with a fork, and stir in the fresh lemon juice, lemon zest, and chopped parsley.
Combine the roasted chicken and vegetables with the lemon-herb rice pilaf and serve immediately.
