0.25 tsp Black pepper
PREPARATION
Preheat your oven to 325°F (165°C).
In a small bowl, combine the minced garlic, rosemary, thyme, salt, pepper, and half of the olive oil to create a thick herb paste.
Rub the herb paste thoroughly over all sides of the beef roast.
Toss the cubed potatoes, carrots, and parsnips with the remaining olive oil and a pinch of salt in a large bowl.
Place the beef in the center of a roasting pan and arrange the vegetable mixture around the edges.
Roast for 45 to 60 minutes, or until the beef reaches an internal temperature of 135°F for medium-rare.
Remove from the oven and transfer the beef to a cutting board, letting it rest for 10 minutes to lock in the juices.
