Garlic Butter Shrimp Scampi with Linguine
Sautéed succulent shrimp tossed in a vibrant garlic-lemon butter sauce over tender linguine for a zesty and satisfying meal.
INGREDIENTS
7 oz Shrimp
1.25 oz Whole grain linguine
0.5 tbsp Ghee
0.5 tbsp Extra virgin olive oil
3 cloves Garlic
0.25 tsp Red pepper flakes
1 tbsp Lemon juice
0.5 tsp Lemon zest
2 tbsp Fresh parsley
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Cook the linguine in a large pot of salted boiling water until al dente, then drain and set aside.
Heat the ghee and olive oil in a large skillet over medium heat until shimmering.
Add the minced garlic and red pepper flakes to the skillet, sautéing for about 1 minute until the garlic is fragrant and golden.
Add the shrimp to the skillet in a single layer and season with sea salt and black pepper.
Cook the shrimp for 2 minutes per side until they are pink and opaque.
Stir in the lemon juice and lemon zest, scraping up any flavorful bits from the bottom of the pan.
Add the cooked linguine and fresh parsley to the skillet, tossing everything together until the pasta is well coated in the sauce.
Serve immediately, garnished with an extra sprinkle of fresh parsley if desired.
