Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon fillet served over a creamy cauliflower mash with garlicky sautéed green beans, finished with a bright squeeze of lemon.
INGREDIENTS
5.5 ounces Salmon Fillet
2 cups Cauliflower florets
1 cup Green beans
1/4 cup Non-fat Greek yogurt
1 tablespoon Extra virgin olive oil
2 cloves Garlic, minced
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and cook for 10-12 minutes until very tender.
Transfer the steamed cauliflower to a food processor with the Greek yogurt and a pinch of salt, then blend until smooth and creamy.
Heat half of the olive oil in a skillet over medium heat, add the green beans and minced garlic, and sauté for 5-7 minutes until tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the remaining olive oil in a separate non-stick pan over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until the fish is flaky.
Serve the salmon over a bed of the cauliflower mash with the garlicky green beans on the side.
