6.5 oz Wild Atlantic Salmon Fillet
1.5 cups Cauliflower Florets
8 Asparagus Spears
1.5 tsp Ghee
1 clove Garlic, minced
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
Add asparagus spears to the steamer during the last 3-4 minutes of cooking until they are bright green and tender-crisp.
Transfer the steamed cauliflower to a blender or food processor with minced garlic and half of the ghee, then blend until smooth and creamy.
Season the salmon fillet with a pinch of sea salt and black pepper.
Heat the remaining ghee in a non-stick skillet over medium-high heat.
Place the salmon skin-side down in the hot skillet and sear for 4-5 minutes until the skin is crispy.
