Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon served with blistered garlic green beans and fluffy brown rice, finished with a squeeze of bright, zesty lemon juice.
INGREDIENTS
5.5 oz Wild Atlantic Salmon
0.5 cup Cooked Brown Rice
2 cups Fresh Green Beans
1 tsp Avocado Oil
1 clove Garlic, minced
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat a non-stick skillet over medium-high heat and add half of the avocado oil.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
While the salmon cooks, steam the green beans for 3 minutes until tender-crisp.
Remove the salmon from the pan and set aside to rest.
In the same pan, add the remaining avocado oil and minced garlic, sautéing for 30 seconds until fragrant.
Add the steamed green beans to the pan with the garlic and toss for 1-2 minutes until slightly blistered.
Serve the seared salmon alongside the warm brown rice and garlic green beans, garnishing with a fresh lemon wedge if desired.
