Preheat your oven to 375°F (190°C) and line a small baking sheet or loaf pan with parchment paper.
Finely dice the yellow onion and green bell pepper, and mince the garlic clove.
In a large mixing bowl, combine the ground beef, egg, onion, bell pepper, garlic, sea salt, black pepper, and smoked paprika.
Gently mix the ingredients by hand until just combined, ensuring you do not overwork the meat to keep it tender.
Shape the mixture into a uniform loaf and place it on the prepared baking surface.
Lay the bacon slices over the top of the meatloaf, tucking the ends underneath the loaf.
Brush 1 tablespoon of the sugar-free BBQ sauce evenly over the bacon-wrapped top.
Bake for 35 minutes, then remove from the oven to brush the remaining 1 tablespoon of BBQ sauce over the loaf.
Return to the oven for another 5-10 minutes or until the internal temperature reaches 160°F.
Allow the meatloaf to rest for 5 minutes before slicing to ensure the juices redistribute.
