Sichuan Dan Dan Noodles with Chili Oil
Sautéed ground turkey and steamed baby bok choy served over soba noodles tossed in a vibrant, creamy sesame sauce.
INGREDIENTS
7 oz ground turkey
0.5 oz dry soba noodles
0.5 tbsp tahini
1 tbsp tamari
0.25 tsp chili oil with flakes
1 cup baby bok choy
1 tsp minced ginger
1 tsp minced garlic
1 tbsp water
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Bring a pot of water to a boil and cook the soba noodles for 4-5 minutes until tender, then drain and rinse with cold water.
In a small mixing bowl, whisk together the tahini, tamari, chili oil, and water until the sauce is smooth and pourable.
Heat a large non-stick skillet over medium-high heat and add the ground turkey, minced ginger, minced garlic, sea salt, and black pepper.
Cook the turkey while breaking it into small crumbles until browned and fully cooked through, approximately 6-8 minutes.
Add the baby bok choy to the skillet during the last 2 minutes of cooking the turkey, allowing it to steam until the leaves are wilted.
Place the noodles in a bowl, drizzle with the sesame-chili sauce, and top with the turkey and bok choy mixture.
