Place the chicken on the prepared baking sheet and bake for 15-18 minutes until the crust is crispy and the chicken is cooked through.
Remove from the oven, spoon the marinara sauce over the chicken, and top with the shredded mozzarella cheese.
Return the chicken to the oven for 3-5 minutes, or until the cheese is melted and bubbly.
While the cheese melts, heat the olive oil in a skillet over medium heat and sauté the zucchini noodles for 2-3 minutes until just tender.
Plate the zucchini noodles and top with the crispy chicken parmesan to serve.
