Seared Salmon Fillet with Steamed Asparagus and Cauliflower Mash
Pan-seared salmon served over a creamy garlic cauliflower mash with tender steamed asparagus, finished with a bright squeeze of zesty lemon.
INGREDIENTS
7 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Asparagus spears
2 tbsp Nonfat Greek Yogurt
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water for 10-12 minutes until very soft.
During the last 4 minutes of steaming the cauliflower, add the asparagus spears to the steamer basket to lightly cook until tender-crisp.
Transfer the steamed cauliflower to a food processor or bowl, adding the Greek yogurt and minced garlic, then blend or mash until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until desired doneness.
Serve the seared salmon over a bed of the cauliflower mash with the steamed asparagus on the side, garnishing with a fresh lemon wedge if desired.
