Garlic-Herb Portobello with Broccoli and Mashed Cauliflower
Herb-seared chicken and earthy portobello mushrooms served over a velvety cauliflower mash with vibrant, crisp-tender baby broccoli.
INGREDIENTS
5 oz Chicken breast
2 large Portobello mushroom caps
1 cup Broccolini
2 cups Cauliflower florets
0.5 tbsp Extra virgin olive oil
0.5 tbsp Ghee
2 cloves Garlic
1 tsp Fresh rosemary
1 tsp Fresh thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Nutritional yeast
PREPARATION
Steam the cauliflower florets until they are very tender, which usually takes about 10 to 12 minutes.
Season the chicken breast with half of the salt and pepper, then sear in a skillet with half of the olive oil until golden and cooked through.
Remove the chicken to rest, then add the remaining oil to the same skillet to sauté the sliced portobello mushrooms and broccolini with garlic, rosemary, and thyme until tender.
Mash the steamed cauliflower with ghee, nutritional yeast, and the remaining salt and pepper until it reaches a velvety, smooth consistency.
Slice the chicken and serve it alongside the sautéed mushrooms and broccolini over a generous bed of the warm cauliflower mash.
