INGREDIENTS
6.5 oz Wild Sockeye Salmon
150g Yukon Gold Potatoes
1 cup Broccoli Florets
2 Garlic Cloves
1 tbsp Non-fat Greek Yogurt
1 tsp Extra Virgin Olive Oil
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Peel and chop the potatoes into chunks and place them in a pot of boiling water along with the smashed garlic cloves.
Toss the broccoli florets with half of the olive oil and a pinch of salt then spread them on the baking sheet and roast for 15-20 minutes until the edges are crispy.
Boil the potatoes and garlic until tender then drain and mash with the Greek yogurt and a splash of potato water until creamy.
Season the salmon fillet with salt and pepper then heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crispy then flip and cook for another 2-3 minutes until just opaque.
Serve the seared salmon alongside the garlic mash and roasted broccoli with a fresh lemon wedge.
