Seared Salmon with Roasted Asparagus and Lemon
Pan-seared salmon fillet served with tender roasted asparagus and a squeeze of fresh lemon, finished with a sprinkle of flaky sea salt.
INGREDIENTS
8 oz Wild Atlantic Salmon
200g Fresh Asparagus
2 tsp Extra Virgin Olive Oil
1/2 Fresh Lemon
1/2 tsp Garlic Powder
Pinch of Sea Salt and Black Pepper
PREPARATION
Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Trim the woody ends off the asparagus and toss the spears with one teaspoon of olive oil, salt, and pepper on the prepared baking sheet.
Roast the asparagus for 12 to 15 minutes until tender and slightly charred.
While the asparagus roasts, pat the salmon fillet completely dry with a paper towel and season both sides with garlic powder, salt, and pepper.
Heat the remaining teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4 to 5 minutes until a golden crust forms.
Flip the fillet and cook for another 3 to 4 minutes until the salmon is cooked through and flakes easily with a fork.
Plate the salmon alongside the roasted asparagus and squeeze fresh lemon juice over everything before serving.
