Teriyaki Chicken and Broccoli Stir-Fry
Sautéed chicken breast and crisp broccoli florets tossed in a silky ginger-garlic glaze and served over a bed of fluffy brown rice.
INGREDIENTS
5 oz Chicken breast
2 cups Broccoli florets
0.5 cup Cooked brown rice
2 tbsp Coconut aminos
1 tsp Honey
1 tsp Toasted sesame oil
1 tsp Fresh ginger
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Avocado oil
PREPARATION
In a small bowl, whisk together the coconut aminos, honey, minced ginger, and minced garlic to create the teriyaki glaze.
Cut the chicken breast into bite-sized pieces and season evenly with sea salt and black pepper.
Heat the avocado oil in a large skillet or wok over medium-high heat until it begins to shimmer.
Add the chicken to the skillet and sear until golden brown and cooked through, approximately 6 to 8 minutes.
Remove the chicken from the pan and set aside; add the broccoli florets to the same pan with a tablespoon of water.
Cover the pan with a lid to steam the broccoli for 3 minutes until it is vibrant green and tender-crisp.
Return the chicken to the pan, pour the teriyaki glaze and toasted sesame oil over the mixture, and toss for 1 minute until the sauce thickens.
Serve the stir-fry immediately over the warm cooked brown rice.
