5 oz salmon fillet
1 tbsp dijon mustard
1 tbsp almond meal

1 cup broccoli florets
1 cup red bell pepper
0.5 tbsp extra virgin olive oil
0.5 tbsp lemon juice
PREPARATION
Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
In a small bowl, combine the almond meal, dried parsley, dried dill, and garlic powder.
Place the broccoli florets and sliced red bell pepper on one side of the sheet pan, drizzle with olive oil and half of the salt and pepper, then toss to coat.
Place the salmon fillet on the other side of the pan and season with the remaining salt and pepper.
Brush the top of the salmon with Dijon mustard, then evenly press the almond-herb mixture onto the mustard to create a crust.
Roast in the oven for 12-15 minutes, or until the vegetables are tender and the salmon flakes easily with a fork.
Drizzle the fresh lemon juice over the salmon and roasted vegetables before serving.
