PREPARATION
Preheat oven to 400°F (200°C).
Place cauliflower florets and diced potato in a steamer basket over boiling water and steam for 12-15 minutes until very tender.
Heat olive oil in a large skillet over medium heat and add onion, carrots, and mushrooms, sautéing for 6-8 minutes until softened.
Stir in minced garlic, thyme, sea salt, and black pepper, cooking for 1 minute until fragrant.
