PREPARATION
Preheat your oven to 325°F (160°C) and line a 4-inch springform pan or a small ramekin with parchment paper.
In a small bowl, mix the almond flour with a few drops of water or a pinch of stevia to form a crumbly texture, then press it firmly into the bottom of the prepared pan.
In a medium mixing bowl, combine the Greek yogurt, vanilla protein powder, egg, stevia, vanilla extract, and lemon juice.
Whisk the mixture vigorously until it is completely smooth and no lumps of protein powder remain.
Pour the cheesecake batter over the almond flour base and smooth the top with a spatula.
