Shrimp and Edamame Stir-Fry with Jasmine Rice
Succulent shrimp and crisp edamame are wok-seared with a vibrant blend of cauliflower and jasmine rice, finished with a savory ginger-tamari glaze.
INGREDIENTS
7 oz Shrimp
0.5 cup Cooked jasmine rice
1 cup Cauliflower stir fry rice
0.25 cup Shelled edamame
0.25 cup Corn kernels
1 tsp Toasted sesame oil
1 tbsp Tamari
1 tsp Fresh ginger
1 clove Garlic
1 tbsp Green onions
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Pat the shrimp dry with paper towels and season with sea salt and black pepper.
Heat the toasted sesame oil in a large wok or skillet over medium-high heat.
Add the shrimp to the pan and sear for 2 minutes per side until pink and opaque, then remove and set aside.
In the same pan, add the minced garlic and grated ginger, sautéing for 30 seconds until fragrant.
Add the cauliflower stir fry rice, corn, and shelled edamame to the pan, stirring frequently for 3-4 minutes until the vegetables are tender-crisp.
Fold in the cooked jasmine rice and the cooked shrimp, tossing everything together to combine.
Drizzle the tamari over the mixture and stir-fry for another minute until the rice is heated through and the flavors are well-incorporated.
Garnish with sliced green onions and serve immediately.
