Classic Baked Ziti with Ricotta
Tender chickpea pasta and lean ground turkey baked in a vibrant herb-infused marinara sauce with dollops of creamy, protein-rich ricotta cheese.
INGREDIENTS
1.5 oz dry chickpea ziti pasta
5 oz ground turkey
0.5 cup tomato puree
0.25 cup part-skim ricotta cheese
1 tbsp grated parmesan cheese
1 cup fresh baby spinach
0 tsp extra virgin olive oil
1 clove garlic
0.25 tsp dried oregano
0.25 tsp sea salt
0.25 tsp black pepper
2 tbsp fresh basil leaves
PREPARATION
Preheat your oven to 375°F (190°C).
Bring a pot of salted water to a boil and cook the chickpea ziti for 2 minutes less than the package instructions suggest for al dente.
In a large oven-safe skillet, heat the olive oil over medium heat and sauté the minced garlic for 30 seconds until fragrant.
Add the ground turkey to the skillet, breaking it up with a spoon, and cook until browned and fully cooked through.
Stir in the tomato puree, dried oregano, sea salt, black pepper, and baby spinach, simmering until the spinach has wilted.
Drain the pasta and toss it directly into the skillet with the turkey and sauce until well coated.
Dollop the ricotta cheese over the top of the pasta mixture and sprinkle with the grated parmesan.
Place the skillet in the oven and bake for 15 minutes, or until the cheese is melted and the sauce is bubbling.
Remove from the oven and garnish with fresh torn basil leaves before serving.
