While vegetables roast, cut the tempeh into 1-inch cubes.
In a small bowl, whisk together the maple syrup, tamari, garlic powder, and onion powder to create the glaze.
Heat the remaining 1 teaspoon of olive oil in a non-stick skillet over medium-high heat and sear the tempeh cubes until golden brown on all sides.
Reduce heat to low, pour the glaze over the tempeh, and stir constantly for 1-2 minutes until the liquid thickens and coats the tempeh.
Remove from heat, toss the glazed tempeh with the roasted vegetables, and sprinkle with nutritional yeast before serving.
