Miso-Glazed Salmon with Roasted Asparagus
Flaky salmon fillets brushed with a savory miso glaze and roasted alongside crisp asparagus for a vibrant and umami-rich Japanese-inspired dinner.
INGREDIENTS
6 oz Salmon fillet
1.5 cups Asparagus spears
1 tbsp White miso paste
1 tbsp Coconut aminos
1 tsp Rice vinegar
1 tsp Toasted sesame oil
1 tsp Fresh ginger
1 clove Garlic
0.5 tsp Sesame seeds
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
In a small bowl, whisk together the white miso paste, coconut aminos, rice vinegar, toasted sesame oil, grated fresh ginger, and minced garlic until the glaze is smooth.
Place the salmon fillet on one side of the prepared baking sheet and season lightly with sea salt and black pepper.
Arrange the trimmed asparagus spears on the other side of the baking sheet, tossing them with a tiny drop of sesame oil and a pinch of salt.
Generously brush the miso glaze over the top and sides of the salmon fillet using a pastry brush or spoon.
Roast for 12 to 15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender and slightly charred at the tips.
Remove from the oven and sprinkle the salmon with toasted sesame seeds before serving immediately.
