Carne Asada Quesadillas with Guacamole
Seared flank steak and melted grass-fed cheddar folded into a crisp sprouted grain tortilla, served with a side of creamy hand-mashed guacamole.
INGREDIENTS
6 oz Flank steak
0.25 tsp Olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Ground cumin
0.25 tsp Garlic powder
0.5 medium Sprouted grain tortilla
0.5 oz Grass-fed cheddar cheese
0.13 whole Avocado
1 tsp Lime juice
1 tbsp Red onion
1 tbsp Fresh cilantro
PREPARATION
Rub the flank steak evenly with the olive oil, sea salt, black pepper, ground cumin, and garlic powder.
Heat a cast-iron skillet over medium-high heat and sear the steak for approximately 4 to 5 minutes per side for medium-rare.
Transfer the steak to a cutting board and let it rest for 5 minutes before slicing thinly against the grain.
In a small bowl, mash the avocado with the lime juice, finely diced red onion, and chopped cilantro until smooth and combined.
Wipe out the skillet and place the sprouted grain tortilla inside over medium heat, sprinkling the shredded cheddar cheese over one half.
Arrange the sliced steak over the cheese, fold the tortilla in half, and cook for 2 minutes per side until the tortilla is golden and the cheese has melted.
Slice the quesadilla into wedges and serve immediately with the fresh guacamole.
