Preheat your oven to 400°F (200°C).
Toss the sliced zucchini and red bell pepper with 0.5 tsp of olive oil, 0.125 tsp of sea salt, and 0.125 tsp of black pepper.
Spread the vegetables on a baking sheet and roast for 15-20 minutes until tender and slightly charred.
Season the chicken breast with the remaining sea salt, black pepper, and dried oregano.
Grill or pan-sear the chicken over medium-high heat for 6-7 minutes per side until the internal temperature reaches 165°F.
In a food processor, combine the rinsed chickpeas, tahini, lemon juice, garlic, and the remaining 0.5 tsp of olive oil until the mixture is smooth and creamy.
Slice the grilled chicken into thin strips.
Spread the homemade hummus onto a large plate, top with the roasted vegetables and chicken strips, and serve immediately.
