Heat the olive oil in a medium non-stick skillet over medium heat.
Add the diced onion and red bell pepper to the skillet, sautéing for 5-7 minutes until the vegetables are softened and the onions are translucent.
Stir in the minced garlic, smoked paprika, cumin, sea salt, and black pepper, cooking for 1 minute until the spices are fragrant.
Pour in the crushed tomatoes and stir to combine with the vegetables. Reduce heat to low and let the sauce simmer for 5 minutes.
Slowly pour the liquid egg whites into the tomato mixture, stirring gently to incorporate them into the sauce which will help it thicken and increase the protein content.
Use a large spoon to create two small wells in the tomato sauce. Carefully crack one whole egg into each well.
Cover the skillet with a lid and cook for 6-8 minutes, or until the egg whites are fully set but the yolks remain slightly runny.
Remove the skillet from the heat. Sprinkle the crumbled feta cheese, fresh parsley, and fresh cilantro over the top before serving directly from the pan.
